Nutty Vegan Bars

This guy's vegan! I make these for a special trip... then eat the rest all week!

1 cup Peanut Butter
2/3 cup Honey
1/2 cup Coconut Oil
2 cups Oats (not instant)
½ cup almonds
¼ cup sunflower seeds
¼ cup pumpkin seeds
1 cup rolled oats
1/3 cup flour
1 tsp baking soda
¼ tsp sea salt
½ cup raisins or dried cranberries
¼ cup vegan chocolate chips, carob chips, or choco chips or goji berries!
½ cup maple syrup or honey or a combo of both
¼ cup apple juice
1/3 cup almond butter
1 tsp vanilla

Dry toast almonds and seeds in a pan until golden, cool, then chop roughly
Stir toasted nuts/seeds, oats, flour, baking soda, salt, raisins, and choco chips together in a medium bowl
Whisk together maple syrup, apple juice, almond butter and vanilla in a small bowl
Pour wet mixture over the dry ingredients and stir to coat. If it’s too dry add a little more maple syrup
Press into 8x8 oiled or lined pan
Bake at 350degrees for 20 minutes, score into 12 bars, then bake another 10-12 min longer
Let cool on rack 10 minutes then make sure to cut the bars again before they get too hard.
Wrap individually and store in the freezer before you eat them all!
