Peanut Butter Lara Bars

Another winner for the snack pack especially if you love peanut butter

1 cup Seedless/Pitted whole Dates
1/2 cup cashews
2 tbsp natural peanut butter
1/2 tsp cinnamon
1/2 cup peanutsGrind up the dates and cashew really well in your food processor.
Add in the rest of the ingredients and keep grinding away until it sticks into a ball. If it's too sticky, add more liquid like a touch of vanilla or applesauce. If it's too wet and sticky add more peanuts.
Flatten out in an 8x8" pan that's lined with parchment paper. Pop in the freezer so it sets. Plop it out onto a cutting board and cut into squares - wrap individually - then freeze in a big ziplock. I usually cut it in half and press the 2 halves together so it's a bit thicker.
