PB Coconut Balls

A peanuty and chocolaty version of my favourite Almond Coconut Balls - no carbs or sugar in these beauties.

1 cup natural peanut butter
½ cup coconut flour
½ cup unsweetened shredded coconut
1/4 cup carob powder or cocoa powder
4 Tbsp. canned coconut milk
4 Tbsp. coconut oil
1 packet Stevia
Add all ingredients to a food processor and blend until nicely mixed together. If it's too wet, add some ground flax seeds or more coconut flour.

optional add ins:
1/4 cup craisins
1/4 cup pumpkin seeds
Add these in and quickly blend just to mix them in.

Roll the mixture with your hands into bite sized balls, or big balls...and roll them in some shredded coconut in a bowl.
Place them on a plate and refrigerate for 30 minutes or. Enjoy!
