1 c large flake oats
1/2 c ground flaxseed
2 Tbs fresh ground UN-brewed coffee or espresso beans
1/2 c creamy almond or peanut butter
1/4 c honey
1 tsp vanilla
1/4 c chocolate or carob chips
1/4 c dried cranberries or goji berries
Directions
Stir oats, flaxseed, and coffee granules together, then add your almond or peanut butter, honey, and vanilla. Once well combined fold in your chocolate chips and cranberries. Stir well, you might have to use your hands! If it’s too dry then add a Tbs of melted coconut oil.
Roll into about 12 balls of whatever size you would like. Store in the fridge for 1 week or wrap and put in the freezer.
