• 1 cup whole pecans
• 1 cup pitted medjool dates
• 1 Tbs coconut oil
• 1 tsp vanilla
• 3 Tbs maple syrup
• 1/3 cup rice flour (or 1/4 cup + 1 Tbs Spelt flour – and dont put in the tapioca and xanthan gum)
• 1.5 Tbs tapioca flour
• 1/2 tsp xanthan gum
• 1 tsp baking powder
• 1/4 tsp salt
• 1/2 tsp cinnamon
Pulse the pecan in the food processor until just crumbly Add the dates, coconut oil, vanilla, maple syrup and pulse again until the dates are broken up into smaller bits In a separate bowl mix together the rest of the dry stuff and add it to the food processor Pulse until the mixture starts to come together Use a spoon or tablespoon to scoop out the mixture onto the baking sheet, makes about 12-16
Bake at 350 degrees for 12 minutes Cool on the pan then transfer to a cooling rack.
