1 cup Seedless/Pitted whole Dates
1/2 cup cashews
2 tbsp natural peanut butter
1/2 tsp cinnamon
1/2 cup peanutsGrind up the dates and cashew really well in your food processor.
Add in the rest of the ingredients and keep grinding away until it sticks into a ball. If it’s too sticky, add more liquid like a touch of vanilla or applesauce. If it’s too wet and sticky add more peanuts.
Flatten out in an 8×8″ pan that’s lined with parchment paper. Pop in the freezer so it sets. Plop it out onto a cutting board and cut into squares – wrap individually – then freeze in a big ziplock. I usually cut it in half and press the 2 halves together so it’s a bit thicker.
