- 4 cups of dates (if not medjool ones, you want to soak and drain the dry ones)
- 1/2 cup Pumpkin seeds
- 1 cup oats
- 1/2 cup sunflower or sesame seeds
- 4 tsp Tahini
- dash of salt
- coconut to roll them in
- Soak dates in warm water until they rehydrate, then drain them. Unless you use medjool dates, you should be fine.
- Place all ingredients in your food processor or and process until mostly smooth,
- Roll ’em as big is you want them roll them in coconut
- Freeze on a tray then plop them into a big ziplock for future snacking!
