1/2 cup whole, raw almonds
1/2 cup cashews
1/2 cup medjool dates, pitted
1/2 cup dried mangos
1/4 cup cranberries
2 tbs flaxseed meal
2 tbs chia seeds
2 tbs raw cacao powder
3 tbs coconut oil, melted
1 or 2 tbs water or juice – this depends how dry your mixture is after you process it, so don’t add it right away!
1/8 cup desiccated coconut to roll balls in
• Place all ingredients, except the water and coconut, into a food processor. Pulse until everything starts to bind together. Test for stickyness: they should be just moist enough to cling together but not too moist that it is soggy. If they’re too dry then add some water or juice.
• Take 1 heaped tbs at a time of mixture and roll with wet hands into a ball – then roll in desiccated coconut. Place on pan and put in fridge or freezer, once all rolled, to set for 30 minutes.
• Store in a glass jar in fridge – or in freezer.
*You can substitue goji berries for cranberries, apricots for mangos, walnuts for cashews – any way you do it is yummy!
