This one is pretty quick and easy. Not as packable since they’re soft but they won’t make it to your pack anyway..
½ cup sesame seeds
1 ½ cups almond flour
½ tsp baking soda
¼ tsp sea salt
⅓ cup honey
⅓ cup tahini
1 tsp vanilla extract
Spread the sesame seeds in a baking sheet or pie plate
Whisk up the almond flour with the baking soda and salt. In another bowl, mix the honey with the tahini and vanilla extract. Add the dry ingredients to the wet ingredients and stir until it’s all mixed up. Scoop out the dough into balls then roll them in the seeds. Line a cookie tray with parchment paper and place the balls on there then flatten them into 1/4-inch-thick rounds about 2″ apart.
Bake at 350 for about 8 minutes, until the bottoms are golden; shift the pans from top to bottom halfway through. After they’ve been out of the oven for 5 mins transfer them to a cooling rack. But make sure you eat some warm ones… soooo good!
